2 Healthy and Decadent Ways to Enjoy Dark Chocolate

Ahh, chocolate. Who doesn’t love it? From children filling their trick or treat bags full to adults, indulging in gourmet chocolate truffles after a long day at work — everyone enjoys the sensuous, decadent, and complex flavors that chocolate has to offer.

Chocolate Coconut Truffles
Nothing is more decadent than a gourmet dark chocolate truffle, straight from the box. But what if you could make them at home? Impress your special someone with a gift made straight from the heart (and directly to their stomach). Here’s what you need:

  • 1 cup unsweetened baking chocolate
  • 6 dates
  • 1 tablespoon almond butter
  • 2 tablespoons coconut flour (more if needed)
  • 1/4 cup coconut shreds (more for coating)
  • 1 teaspoon agave
  • 1/2 teaspoon vanilla
  • 1 pinch of salt

Blend the dates in the food processor until they are a thick paste. Add the coconut flour and pulse. Microwave the chocolate at 30 second intervals, stirring until the chocolate is glossy and has completely melted. Incorporate the melted chocolate, agave, salt, vanilla and pulse. Then, add the coconut. You should have a thick scoopable mixture. Taking a spoon, scoop out and roll rounds of the mixture, rolling it in the excess coconut flakes. Chill for 30 minutes and enjoy!

Chocolate Almond Brownies
These babies are accidentally gluten free and purposely delicious. Top with ice cream while warm and watch your friends’ eyes roll to the back of their heads. For this recipe, you need:

  • 3/4 cup almond flour
  • 2/3 cup coconut sugar
  • 2 large eggs
  • 1 cup unsweetened gourmet dark chocolate, melted
  • 1 tsp vanilla
  • 1/2 cup coconut oil, melted
  • a pinch of cinnamon, salt, and espresso powder
  • 1 teaspoon baking powder
  • Combine dry ingredients (except sugar) in a large bowl. Meanwhile, combine melted coconut oil, eggs, sugar, and vanilla in a bowl and whisk until well-combined. Meanwhile, melt chocolate at 30-second intervals, stirring in-between until glossy and melted. Slowly whisk in the melted chocolate until the mixture is thick and combined. Then, pour into dry mixture and stir. Once combined, add to a greased baking pan and bake at 350 for 30 minutes or until a toothpick runs clean through it.
